Nithia will be recreating familiar Singapore foods with a twist using ingredients sourced from Penang!
Which dish do you think best represents Singapore? For Nithia, rojak is the undisputed answer. It is a dish that brings together diverse ingredients with a delicious dressing. Like the dressing, our shared Singaporean identity brings our diverse cultural groups together. Step into Nithia’s home and sit around the table as she serves up her version of rojak and other Singaporean classics such as laksa. These local delights are a sure hit at MCF2022!

I am a keen cook and enjoy preparing food for others. I am Singaporean but spent a significant part of my teenage years up to my twenties in the UK. I came back to Singapore for family and career. My travels have inspired my cooking and I enjoy learning new dishes/cuisines to expand my repertoire. As a host on The Travelling Spoon, I also love hosting travellers all over the world. Food is an important part of my life and I enjoy discussing all aspects of it with others, be it through my writing or over dinner (very much like this event)!
a state of mind.
I will be cooking iconic Singapore food using fresh ingredients sourced from Penang, Malaysia. One of the dishes will be rojak, which I think represents Singapore as a nation. Singapore is a mixture of people from different backgrounds and races. I would also be serving my magic Pandan cake, which is a single cake with three different textures.
