Ella will take you on a flavour-filled journey with her special dish, Anishi. Made from fermented yam leaves, this delectable creation is a hot favourite among her Singaporean friends. During the dinner, she will unveil the secrets of Nagaland’s cuisine, with its hearty stews and slow cooking methods that use the natural fats from the meat. On the other hand, Eiko will dazzle you with a traditional Japanese culinary experience called Kaiseki. Rooted in the principles of Japanese Zen Buddhism, Kaiseki pays deep respect to ingredients and showcases a history dating back centuries. In the Azuchi-Momoyama period of the 1500s, monks would enjoy simple meals during their training, often eating only once a day. To stay warm and satiated, they would hold warm stones close to their bodies. This practice of a single daily meal became known as Kaiseki-ryori, and its essence continues to be passed down through generations. Ella’s Nagaland spread and Eiko’s Kaiseki feast will be sure to please your taste buds!
