Amidst the COVID-19 pandemic, Tsz Cham found solace in making hand-milled rice noodle rolls in his kitchen, which garnered positive feedback from friends and acquaintances. Motivated by their enthusiastic response, he embarked on an eight-month journey to perfect the rolls, focusing on using rice to maintain their freshness, chewiness, and smoothness even when consumed on the go. Alongside his cooking skills, Tsz Cham attributes his hawker business’s success to three guiding principles: happiness, attention to detail, and wholeheartedness, which permeate every aspect of his craft, from preparation to presentation.
